I&J’s Spicy Oatmeal Coconut Ginger Pecan Raisin Cookie

Servings: 2 ½ dozen

Ingredients

6tbsp butter, 1 stick

1½c Flour, All-Purpose

3c Oatmeal, quick old fashion

1c Raisins

¾c Sugar, dark brown

½c Sugar, granulated

½c Coconut, sweetened

2 eggs

Habanero Pepper Sauce Add to Cart

Liquids/ Powders/ Dry Seasonings/ Sauce/ Nuts:

1tsp Soda, baking

½tsp Salt

1tbsp Cinnamon

1tbsp Pumpkin spice

2tbsp Ginger, fresh, finely minced

½c Pecan, finely chopped

4tbsp I&J’s Habanero Pepper Sauce #5

1tsp Vanilla

1tsp Maple

Instructions

Step 1: In a large mixing bowl add butter and sugars, mix until they become creamy.

Step 2: Add eggs, vanilla, and maple flavoring, mix for several minutes.

Step 3: In a separate bowl add flour, baking soda, salt, cinnamon, and pumpkin spice, mix the ingredients thoroughly.

Step 4: Combine the wet & dry components together, stir for several minutes.

Step 5: Add ginger, coconut, I&J’s Habanero sauce, pecans, raisins and oats until all the components are infused together, cover and place in the refrigerator for 30 minutes.

Step 6: Preheat the oven to 350F degrees. Scoop out 1½tbsp of cookie dough, form into a ball and place it on a cookie sheet, until filled provide spacing between cookies between 9 – 12 cookies per sheet

Step 7: Place cookies in oven and bake for 8 - 10 mins or until done.
