I&J’s Spicy Habanero Honey Hickory Spice Pork Ribs

Ingredients
4lbs Ribs, Pork
½c Ginger, fresh, ¼” sliced
1ea Onion, med, yellow, cut in quarters
8ea Garlic, Cloves, crushed
2ea Limes, med, halves
2tbsp Oil, Sesame

Sauces/dry seasonings:
6 Bay Leaves
2tbsp Vinegar, Apple Cider
4 Pork, bouillon cubes
2tbsp Salt
¼c Vinegar, White Distilled

Instructions
Step 1: Cut the rack of pork ribs into individual ribs place into an 8-quart pot, add water, cut 2 limes and squeeze the lime juices out, add ¼c of distilled white vinegar, and 1tbsp of salt, then add tap water over the meat until its covered.
Step 2: Let it soak for 3-5 mins, this helps to break down protein fibers and aides in tenderizing the meat. After the soak, use the lime halves to clean the rib meat drain and rinse thoroughly.
Step 3: Pre heat the stove to Hi. Place the meat back into the pot, add water until it’s 1” over the ribs, add ginger, onions, garlic, bay leaves, bouillon cubes, and sesame oil.
Step 4: Place the pot on the stove and let it cook for 1 hour check on it periodically, add water if necessary due to evaporation ensuring that the ribs remain covered and let boil.
Step 5: Check the tenderness of the ribs they should be tender, however depending on the thickness of the ribs they might require a little more time. If your satisfied, then remove from heat.
Step 6: Place the ribs in a bowl and smother with I&J’s Habanero Honey Hickory Spice BBQ #5 Sauce cover and refrigerate for a couple of hours or overnight allowing the flavors to soak into the meat.
Step 7: Preheat the oven for 350F degrees
Step 8: Place the ribs in an oven pan cover with aluminum foil and heat for 15 minutes, then uncover using a basting brush, coat the meat with the remaining sauce and leave for 7 mins, turn the ribs over, coat the meat on the other side and let sit for another 7 mins. When the ribs begin to caramelize, they are done, before serving the ribs apply one last coating of sauce over the ribs.
