
I&J’s Spicy Beef and Pork Empanadas

Servings: 3 dozen (depends on size of empanadas press)
Ingredients
1lb Pork, ground
1lb Beef, ground
1.4oz Onions, yellow, chopped
1.2oz Spinach, baby, chopped
2oz Cilantro, chopped
2.5oz Garlic, cloves
2tbsp Silver Swan, Soy Sauce
5tbsp I&J’s Habanero Pepper Sauce #5
1tsp Oil, Sesame
2tbsp Soy Sauce, Kikoman, Lite
2tbsp Kikoman, Soy Sauce
6tbsp I&J’s Habanero Pepper #5
1tbsp Worcestershire Sauce
2tbsp Oil, Olive, virgin
Habanero Pepper Sauce Add to Cart
Powders/dry seasonings:
2tsp Onion
4tbsp Adobo
3tsp Garlic
3tsp Curry
1tsp Cumin
2tbsp Sazon, Tropical, Badia
2tsp Paprika
2tsp Corriander
1tsp Pepper, black
1tsp Salt
1½tbsp annatto, powder
1tbsp Sazon, Complete Seasoning
1tbsp Tamari, Soy Sauce
1c Water, tap
Instructions
Step 1: Add ingredients in a large bowl and mix thoroughly.
Step 2: Preheat the stove to Med Hi, add 2tbsp of olive oil in a 5-quart pot, let the oil heat up, add the mixture until it’s all in the pot.
Step 3: Let cook until the meat is cooked down until the juices have dissipated and let brown a little.
Step 4: Add a cup of water, puree the mixture using a hand blender, let it cook, down a second time, but this time let the mixture be a little moist.
Step 5: Take off the heat, cover it and let rest for 10 minutes. Place in a covered bowl and place in the refrigerator for a couple hours or overnight.
Empanadas Pastry
Ingredients
3pkg Pastry, Puff, dough
¼c Flour
1 Egg
¼tsp salt
2tbsp Water, tap
Instructions
Step 1: Sprinkle 1/4c flour out on a clean countertop, roll out your pastry dough using a roller pin to under 1/8” thick and cut out a 5” discs.
Step 2: Using a empanada press, place a pastry disc on the press add 1tbsp of the filling in the center of the disc and close the empanada press.
Step 3: Place the empanada on cookie sheet
Step 4: Repeat this process until all the filling is gone.
Step 5: Preheat the oven to 375F degrees.
Step 6: Take an egg crack it into a bowl, add 2tbsp of water and a pinch of salt, beat the egg for 2 mins.
Step 7: Apply with a basting brush, the eqq wash over the top of each empanada
Step 8: Place in the oven and cook for 10 - 15 minutes or till golden brown.
